Taping your hand to the steering wheel limits your movement. This means you can't countersteer as much, so you have to use other methods to get the car pointed where you want it to go, like left foot braking, feathering the accelerator, etc. Next time you’re in a car, turn the wheel as far as you can without moving your hand, then get out and see how far it moved. as you will see, it almost didn’t move at all.
